由食用不良之食物所發生之病症,統稱食物中毒。其原因不一,最要者不外下列三大類: (甲)由於食物含帶病菌或寄生蟲者,統稱食物傳染。 (乙)由於食物本質內在毒素,或其寄生之病菌所産生之毒素者,統稱中食物毒。 (丙)由於飲食攙雜異物,而致偶然中毒者,謂之中攙雜物毒。昔時統稱中食物毒爲中屍毒,現經證明不確,蓋由動物性蛋白腐化作用所産生之屍毒(Ptomaine)及盧可馬印(Leukomaines)等質,其本體殊乏顯著之毒性。 (甲)食物傳染
