目的了解中山市2004~2009年食品中金属污染状况,发现食品安全隐患,探讨提高食品安全质量的措施。方法对2004~2009年食品中的铅、镉、汞和铝含量检测数据作描述性分析。结果 362份食品中铅含量超标51份,超标率为14.09%;镉超标36份,超标率为9.94%;155份食品中汞超标18份,超标率为11.61%;114份食品中铝超标34份,超标率为29.82%。所检食品中叶菜类的铅、汞、猪肾的镉、油条的铝超标率居高,分别是铅超标率31.37%(16/51)、汞超标率61.11%(11/18)、镉超标率25%(9/36)、铝超标率58.82%(20/34)。结论该市食品总体维持较高的合格水平,个别食品金属含量超标率较高,应健全食品的管理制度,继续加强对食品金属污染的监测力度,提高检测水平,确保食品卫生安全。
Objective To understand the status of metal contamination in food from 2004 to 2009 in Zhongshan City, discover hidden dangers of food safety and discuss measures to improve food safety and quality. Methods Descriptive analysis was performed on the detection data of lead, cadmium, mercury and aluminum in food from 2004 to 2009. Results The lead content in 362 samples exceeded the limit of 51, the exceeding standard rate was 14.09%, the excessive cadmium content was 36, the exceeding standard rate was 9.94%, the excessive mercury content in 155 samples was 11, and the exceeding standard rate was 11.61% Copies, exceeding the standard rate of 29.82%. The lead exceeding standard rate of lead, mercury and pig kidney of cadmium and fritters in the food seized were 31.37% (16/51) and 61.11% (11/18), respectively, exceeding the standard Rate of 25% (9/36), aluminum exceeded the rate of 58.82% (20/34). Conclusion The food in the city generally maintained a high level of compliance, and the exceeding rate of the metal content of individual foods was high. The management system of food should be perfected, and the monitoring of food metal contamination should be strengthened to improve the testing level and ensure the hygiene and safety of food.
