目的了解渝北区近4年早餐食品微生物污染状况,为食用安全及监督执法、制定合理有效的监管措施提供科学依据。方法随机抽取重庆市渝北区不同生产、销售渠道的早餐食品,进行微生物项目检测。结果 2012年-2015年共检测696件早餐食品,合格468件,总合格率为67.24%,不同年份合格率比较,差异有统计学意义(χ2=10.11,P<0.05)。不同场所的样品合格率差异有统计学意义(χ2=10.88,P<0.05)。在所检样品中,监督抽检、委托送检的合格率差异有统计学意义(χ2=14.76,P<0.05)。所测样品中菌落总数、大肠菌群的合格率较低,分别为84.48%、81.61%;霉菌及酵母计数合格率为99.43%;沙门菌、志贺菌、金黄色葡萄球菌合格率均为100.00%。结论早餐食品安全存在一定隐患,应加大早餐食品的监督力度,彻底杜绝由早餐食品引起的食源性疾患发生。
Objective To understand the status of microbial contamination of breakfast food in the past 4 years in Yubei district and to provide scientific basis for food safety and supervision and law enforcement and formulation of reasonable and effective regulatory measures. Methods Breakfast foods from different production and sales channels in Yubei District of Chongqing were randomly selected for microbial test. Results A total of 696 breakfast foods were detected in 2012-2015 with a total of 468 passes, with a total pass rate of 67.24%. There was a significant difference in pass rates between years (χ2 = 10.11, P <0.05). There were significant differences in the passing rate of samples in different places (χ2 = 10.88, P <0.05). In the seized samples, there was a significant difference in the qualified rate of supervised sampling and entrusted inspection (χ2 = 14.76, P <0.05). The total number of colonies and coliform bacteria in the tested samples were lower, which were 84.48% and 81.61%, respectively. The passing rates of mold and yeast were 99.43%, the pass rates of Salmonella, Shigella and Staphylococcus aureus were 100.00 %. Conclusion There is a certain hidden danger in the safety of breakfast food. Supervision of breakfast foods should be intensified to prevent foodborne diseases caused by breakfast foods.
