(一) 我国甘蔗栽培和利用甘蔗制糖,起源很早,是世界上最古老的植蔗和甘蔗制糖国家之一。古代在没有“蔗”字以前,有“柘”或“诸柘”等称呼,名称不下三十余种。公元前四世纪(战国时代)屈原的《招魂赋》中已有“肠鳖炮羔,有柘浆些”的记载。柘浆是蔗汁的浓缩制品,可直接食用,亦可以烹调。《招魂赋》虽然只谈及那时楚国(今湖北一带)的甘蔗食用情况,但是,从甘蔗的生长习性来看,可以推断,我国华南地区对甘蔗的食用应比长江流域更早。晋朝(公元二至三世纪)《西京杂记》(作者未详)提到,汉高帝时(公元前三世纪初期前后)南粤出产石蜜。石蜜一物,后人对它的解释屡见于文献,如公元一世纪(汉朝)杨孚的《异物志》提到:“甘蔗……生取汁……煎而曝之,即凝,如冰……时人谓之石蜜。”公元五世纪(南北朝)陶弘景的《名医别录》提到:“蔗出江南为胜,庐陵亦有好者。广州一种数年生,皆大如竹,长丈余,取汁为沙糖,甚益人。”又有“荻蔗节疏而细,亦可啖也。”等等。
