[目的]研究不同分子量壳聚糖对韭薹的采后保鲜效果。[方法]通过室温货架模拟试验,分析不同分子量壳聚糖处理对韭薹采后失重率、花苞开放率、呼吸强度、酶活性等生理生化指标的影响。[结果]不同分子量壳聚糖处理可显著抑制韭薹储藏期间的失重率、呼吸强度、腐烂指数和花苞开放率的上升,保持较高的叶绿素和维生素C含量,降低苯丙氨酸解氨酶(PAL)、过氧化物酶(POD)和肉桂酸脱氢酶(CAD)活性,抑制纤维素和木质素积累,从而延缓韭薹的衰老与品质下降,延长储藏寿命,达到保鲜目的,特别是高分子量壳聚糖保鲜效果尤佳。[结论]高分子量壳聚糖在韭薹采后保鲜中具有良好的应用前景。
[Objective] The research aimed to study the post-harvest preservation effect of Chitosan with different molecular weight. [Method] The effects of different molecular weight chitosan treatments on the physiological and biochemical indexes of postharvest weightlessness, bud opening, respiration rate and enzyme activity of Leek orchard were analyzed by room temperature shelf simulation test. [Result] The results showed that different molecular weight chitosan treatments could significantly reduce the weight loss rate, respiration rate, decay index and the opening ratio of buds during the storage period of Leach boll, keeping high contents of chlorophyll and vitamin C and decreasing the contents of phenylalanine ammonia lyase (PAL), peroxidase (POD) and cinnamic acid dehydrogenase (CAD) activity, inhibiting the accumulation of cellulose and lignin, thereby slowing the senescence and quality of Leek sprouts and prolonging the storage life of the leek, in particular, High molecular weight chitosan preservation effect is better. [Conclusion] The high molecular weight chitosan has a good application prospect in postharvest preservation of Leek.
