随着对膳食营养与健康之间关系认识的深入,食物被认为不仅是维持人体生命的必需物质,也是促进健康预防疾病的关键所在。如何更好地利用食物以达到促进健康的目的,如何向消费者提供传达食品健康效应的说明,以提高消费者对于选择健康食品的认知,成为了当今科学家、政府和企业共同关注的要点。传统的食物分类及评价方法存在一定的局限性,不能较为综合地反映食物的整体营养价值。食物营养素度量法(Nu- With the deepening understanding of the relationship between diet nutrition and health, food is not only considered as an essential substance for maintaining human life, but also the key to promoting healthy prevention of diseases. How to make better use of food for health promotion purposes and how to provide consumers with instructions on the health effects of foods so as to enhance consumer awareness of the selection of healthy foods has become a common concern of scientists, governments and enterprises today.
