目的了解辽宁省丹东市部分食品中食源性致病菌污染状况,查出安全隐患,提出预防措施。方法按GB/T4789-2008《食品卫生微生物学检验》方法进行沙门菌、金黄色葡萄球菌、肠出血性大肠埃希菌O157、单增李斯特菌、空肠弯曲菌、致病性弧菌等的检测。结果 181份样品中共检出22株食源性致病菌,致病菌总检出率为12.2%。其中40份活体海产品中检出5株副溶血弧菌、1株创伤弧菌和1株霍利斯弧菌,致病菌检出率为17.5%;40份鲜冻海产品中检出1株副溶血弧菌,致病菌检出率为2.5%;10份生拌海产品中检出7株副溶血弧菌,致病菌检出率为70.0%;21份中式凉拌菜中检出1株产毒性大肠埃希菌,致病菌检出率为4.8%;30份沙拉中检出2株金黄色葡萄球菌,致病菌检出率为6.7%;30份生畜肉中检出1株病牛沙门菌和1株侵袭性大肠埃希菌,致病菌检出率为6.7%;10份生禽肉中检出2株单增李斯特菌,致病菌检出率为20.0%;肠出血性大肠埃希菌O157和空肠弯曲菌均无检出。结论丹东市5类食品中均存在食源性致病菌污染。海产品中致病性弧菌污染较为明显,尤其是生拌海产品中副溶血弧菌的污染较为严重,应当作为关键控制食品加以管理,以消除此类食物中毒发生的安全隐患。
Objective To understand the contamination status of food-borne pathogenic bacteria in some foods in Dandong City, Liaoning Province, find out the potential safety problems and put forward the preventive measures. Methods Salmonella, Staphylococcus aureus, enterohemorrhagic Escherichia coli O157, Listeria monocytogenes, Campylobacter jejuni, Vibrio spp. And so on were tested according to GB / T4789-2008 “Microbiological examination of food hygiene” Detection. Results Twenty-two strains of food-borne pathogens were detected in 181 samples. The total detection rate of pathogenic bacteria was 12.2%. Vibrio parahaemolyticus, Vibrio vulnificus and Vibrio cholerae were detected in 40 live marine products, with the detection rate of 17.5%; 40 Strains of Vibrio parahaemolyticus, the detection rate of pathogenic bacteria was 2.5%; 7 strains of Vibrio parahaemolyticus were detected in 10 samples of raw seafood, the detection rate of pathogenic bacteria was 70.0%; 21 samples of Chinese salad 1 strain of virulent Escherichia coli, the detection rate of pathogenic bacteria was 4.8%; 2 strains of Staphylococcus aureus were detected in 30 salads, the detection rate of pathogenic bacteria was 6.7%; 1 Strain of pathogenic Salmonella enteritidis and an invasive Escherichia coli, the detection rate of pathogenic bacteria was 6.7%; 2 strains of Listeria monocytogenes were detected in 10 samples of raw poultry, the detection rate of pathogenic bacteria was 20.0% ; Enterohemorrhagic Escherichia coli O157 and Campylobacter jejuni were not detected. Conclusion Food-borne pathogens are found in all five kinds of foods in Dandong City. Vibrio parahaemolyticus in seafood is more obvious pollution, especially raw seafood mixed with Vibrio parahaemolyticus pollution is more serious, should be controlled as a key food to be in order to eliminate such food poisoning safety hazards.
