目的调研目前北京市食品企业自检人员的学历构成、专职情况、持证上岗情况,以及食品检验所需培训的相关岗位和企业对于食品自检人员的培训需求情况。方法从相关行业企业领域展开调研,采取企业走访、问卷调查、会议交流等方式进行。结果此次共调研企业360家,发放调查问卷360份,收回有效问卷355份,收回率为98.61%。食品检验所需培训的相关岗位多集中在理化检测、微生物检测、仪器分析检测等;企业侧重于食品安全与质量控制、仪器分析、微生物学的培训以及快速检测仪、紫外-可见分光光度计、液相色谱仪、气相色谱仪等仪器的培训。结论经过调研发现,众多企业的食品自检人员虽然具备较高的学历和良好的学习背景,但是对于目前食品检验所需的各项专业知识、相关技能、职业素质的要求还相差甚远,持证上岗率较低,对各方面的培训需求旺盛。
Objective To investigate the current educational background, full-time status of the self-check staffs of food enterprises in Beijing and their status of holding certificates, as well as the related positions for food inspection and the training needs of enterprises for food self-check staffs. Methods From the field of related industries enterprises to carry out research, to take business visits, questionnaires, meetings and exchanges. Results A total of 360 enterprises were surveyed, 360 questionnaires were handed out, 355 valid questionnaires were withdrawn, and the recovery rate was 98.61%. Food inspection training required for the relevant positions and more focused on physical and chemical testing, microbiological testing, instrumental analysis and testing; companies focus on food safety and quality control, instrumentation, microbiology training and rapid detection, UV - visible spectrophotometer, Liquid chromatography, gas chromatography and other equipment training. Conclusion After investigation, many self-employed food self-check staffs have a relatively high academic record and a good learning background. However, the requirements for various specialized knowledge, relevant skills and professional qualifications required by the current food inspection are still far behind. Certificate of employment rate is low, on all aspects of training needs strong.
