Angiotensin I converting enzyme (ACE) is an important blood pressure regulator. Some inhibitors of this enzyme have better antihypertensive effect and are widely used as food and medicine for prevention and treatment of hypertension. This article summarizes the antihypertensive mechanisms, structural and functional relationships, and potential applications of ACE inhibitors from different food sources.
