以处于花期的野生碱韭为试材,对采自5个地区碱韭的花、叶、根主要营养成分进行了测定分析,以期探明碱韭的营养保健价值,为进一步开发利用提供科学依据。结果表明:野生碱韭营养品质高于常规栽培韭菜,尤其维生素C含量丰富,平均含量482.5mg·(100g)~(-1)FW,最高可达1 146.1mg·(100g)~(-1)FW;作为调味佳品的花中富含营养物质,是一种天然的药食两用保健食品;不同地区碱韭的主要营养品质差异较大,受气候条件与土壤环境的影响明显,其中鄂尔多斯市的碱韭综合营养品质最好。
The main nutrient components of flowers, leaves and roots collected from five areas of Allium Allii were assayed with the wild Alkali Allium as test material in flowering stage in order to explore the nutrition and health value of Allium chinensis, providing a scientific basis for further development and utilization . The results showed that the nutritional quality of Allium sativus L. was higher than that of the common Chinese cabbage, especially the vitamin C content was 482.5mg · (-100) FW (up to 1 146.1mg · 100g -1) FW; as a condiment of the flower is rich in nutrients, is a natural edible and dual-use health food products; different parts of the main nutritional quality of Allium major differences, the climatic conditions and the impact of soil environment, of which Erdos City Allium alkali nutrition best quality.
