过热蒸汽因具有改善食品质地、增加食品风味、保持食品色泽、抑制食品氧化及有效灭酶杀菌等众多优势,而成为新型的加工方式和技术热点,广泛应用于食品、农产品加工领域。基于此,结合过热蒸汽的特点、具体杀菌设备以及应用实例和实验结果,系统阐述过热蒸汽处理技术在杂粮初加工过程中清粮、灭酶、灭菌等方面的应用研究及发展前景。
Superheated steam has become a new processing method and technology hotspot because of its many advantages such as improving food texture, increasing food flavor, keeping food color, inhibiting food oxidation, and inactivating enzymes. It is widely used in the field of food and agricultural products processing. Based on this, combined with the characteristics of superheated steam, specific sterilization equipment and application examples and experimental results, the application research and development prospects of superheated steam treatment technology in grain processing, enzyme inactivation and sterilization during the initial processing of miscellaneous grains are expounded systematically.
