食物是人类硒的基本来源,由于硒是基本的微量元素,故营养硒的状况是非常重要的。测定一些从市场上购买的选择性食品中的硒含量,并且通过分析20个饮食样本来估计硒的每日摄入量。正如估计的一样,选择性食品中硒含量最高值出现在富含蛋白质的食品中,如鱼、肉和蛋类食品中(33~686 ng/g),但在牛奶及其制品中为12~30 ng/g,以及蔬菜、水果中为0.3~77 ng/g,相对较低。分析了全体受试者每日膳食,得到硒的平均摄入量为87μg/d。
Food is the basic source of human selenium, selenium is the basic trace elements, so the nutritional status of selenium is very important. The selenium content of some of the commercially available selective foods was determined and the daily intake of selenium was estimated by analyzing 20 dietary samples. As expected, the highest selenium levels in selective foods were found in protein-rich foods such as fish, meat and eggs (33-686 ng / g), but in milk and products of 12 - 30 ng / g, and vegetables and fruits 0.3 ~ 77 ng / g, relatively low. The daily diet of all subjects was analyzed and the average intake of selenium was 87 μg / d.
