对来自于麦胚自身水解的抗氧化肽VHHH来源进行了初步研究。利用麦胚的粗酶液分别等量水解相同的蛋白,然后再比较VHHH的含量。结果显示:麦胚中的4种可溶性蛋白的含量分别为:清蛋白2.88±0.27%、球蛋白1.10±0.15%、醇溶蛋白0.17±0.03%、谷蛋白0.90±0.08%;在保留时间11.138min处,麦胚蛋白的酸水解液中没有发现VHHH,这表明这种肽不是来自于麦胚蛋白的酸水解;VHHH在麦胚球蛋白的水解物中含量最高,达到4.33%,其次是麦胚清蛋白(4.05%),再次是麦胚醇溶蛋白和麦胚谷蛋白(分别为0.57%和0.48%)。这表明VHHH蛋白源主要来自于麦胚球蛋白,其次来自于麦胚清蛋白。
A preliminary study of the sources of VHHH derived from the hydrolysis of wheat germ was carried out. The crude protein solution from wheat germ was used to hydrolyze the same protein in equal amounts, and then the content of VHHH was compared. The results showed that the contents of four kinds of soluble proteins in wheat germ were 2.88 ± 0.27% albumin, 1.10 ± 0.15% globulin, 0.17 ± 0.03% gliadin and 0.90 ± 0.08% glutenin respectively. At the retention time of 11.138min VHHH was not found in the acid hydrolyzate of wheat germ protein, indicating that this peptide is not derived from the acid hydrolysis of wheat germ protein; VHHH is present at the highest level in wheat germ globulin hydrolyzate, reaching 4.33%, followed by wheat germ Albumin (4.05%), again, is arabinol and wheat germ gluten (0.57% and 0.48%, respectively). This indicates that the VHHH protein source is mainly derived from wheat germ globulin, and secondly from wheat germ albumin.
