建立了用高效液相色谱法快速检测果酒中有机酸的方法。最佳色谱条件:色谱柱为Thermo C18反相柱(4.6×250 mm ,5μm ),pH为2.55、0.01 mol/L的NH4 H2 PO4缓冲溶液为流动相,洗脱流速1.2 mL/min ,色谱柱温45℃,检测波长为210 nm;洗脱时间9 min。在此条件下,10种有机酸得到了良好的分离。该方法具有较好的线性关系( R>0.99824)和较宽的线性范围,相对标准偏差(RSD )为0.25%~3.84%,加标回收率为77.27%~104.56%,重现性好,精确度高。将此方法应用于青梅酒、樱桃酒、蓝莓酒、枇杷酒、荔枝酒、葡萄酒和桑葚酒中有机酸的测定,得到的结果准确可靠,可以用于果酒品质的控制和工艺的调整。“,”A rapid method for determination of organic acids in fruit wines is established .The optimal conditions are as follows :Thermo C18 reversed-phase column (4 .6 × 250 mm ,5μm ) is used;0 .01 mol/L NH4 H2 PO4 of pH 2 .55 is used as mobile phase ;flow rate is 1 .2 mL/min;the column temperature is set at 45 ℃ ;and measurement wavelength is 210 nm .10 organic acids are separated well in 9 min-utes .The peak areas and concentrations show good correlations ( R>0 .998 24 ) .The method has good reproducibility and high accuracy when RSD is in the range of 0 .25% ~3 .84% ( n=5) and the recovery is 77 .27% ~104 .56% .Organic acids in plum wine ,cherry rum ,blueberry wine ,loquat wine ,lychee wine ,red wine and mulberry wine can be determined by this method ,and the satisfactory results can be obtained .
