目的了解青岛市售商品中各类食品的铝残留状况。方法采集青岛市农贸市场、商店超市、路边小摊、小型餐饮店和网上商店生产或销售的共167份样品,包括焙烤、油炸食品,淀粉及淀粉类食品,水产动物及其制品,藻类及其制品,特殊营养用品,地方特色食品和膨化食品。按GB/T 5009.182-2003《面制食品中铝的测定》方法进行检测,按GB2762-2012《食品中污染物限量》进行评价。结果检测的167份样品中,铝检出率为47.9%,超标率为8.98%,最高检出值为1 119.0 mg/kg。检出率最高的3类食品分别为藻类及其制品、水产动物及其制品和淀粉及淀粉类食品,其检出率和超标率分别为100%、100%、78.9%和100%、85.7%、26.3%,最高值分别为644.4 mg/kg、1 119.0 mg/kg和567.5 mg/kg;特殊营养食品、地方特色食品、膨化食品、焙烤油炸食品铝检出率分别为11.7%、64.0%、64.7%、80%,其超标率都为0,最高检出值为74.6 mg/kg。结论铝残留问题值得关注,尤其是海产品。
Objective To understand the status of aluminum residues in various foods sold in Qingdao. Methods A total of 167 samples were collected from Qingdao Farmers Market, supermarkets, roadside stalls, small restaurants and online shops, including baked goods, fried foods, starch and starchy foods, aquatic animals and their products, algae And its products, special nutrition supplies, local specialty foods and puffed food. Results Among the 167 samples tested, the detection rate of aluminum was 47.9% and the rate of over standard rate was 8.98%. The highest detection limit was 1119.0 mg / kg. The highest detection rate of the three types of food were algae and their products, aquatic animals and their products and starch and starchy foods, the detection rate and the rate of over-compliance were 100%, 100%, 78.9% and 100%, 85.7% , 26.3% with the highest values of 644.4 mg / kg, 119.19 mg / kg and 567.5 mg / kg, respectively. The detection rates of special nutritious foods, local specialties, puffed foods and baked deep-fried foods were 11.7%, 64.0% , 64.7% and 80% respectively. The rate of over standard rate was 0 and the maximum value was 74.6 mg / kg. Conclusion Aluminum residues deserve attention, especially seafood.
