Organisms produce reactive oxygen species continuously during aerobic metabolism. The body needs intracellular and extracellular antioxidants to protect oxidative damage of reactive oxygen species to biomolecules such as DNA and lipids. In vitro studies have shown that the most important intracellular antioxidant is superoxide dismutase; extracellular antioxidants to be present in the serum, including V_c, V_E and uric acid salts and some other small molecules. Many human diseases are associated with oxidative damage caused by reactive oxygen species. At present, people are more concerned about the role of ROS in the LDL oxidation when atherosclerosis is formed; and how to use antioxidants to reduce oxidative damage in the corresponding animal model.
