目的了解厦门市面制食品中铝污染的状况,并评估居民的铝暴露情况。方法对2006-2011年厦门市市售面制食品中铝的含量进行监测,结合2010年厦门市居民膳食消费量调查结果,评估居民面制食品中铝的暴露量。结果141份样品铝含量范围为5.53~882.00 mg/kg,中位数(P25,P75)为57.90(19.80,339.00)mg/kg。厦门市居民平均每周从面制食品中摄入的铝为0.92 mg·kg-1·bw-1,占暂定每周可耐受摄入量(PTWI)的46.0%;高端消费人群(面制食品消费量第90百分位数)每周面制食品中铝暴露量为2.17 mg·kg-1·bw-1,占PTWI的108.5%。结论目前厦门市居民面制食品中的铝暴露量存在安全隐患,需要切实加强面制食品的监督管理,降低面制食品中铝含量。
Objective To understand the status of aluminum contamination in flour products in Xiamen and evaluate the aluminum exposure of residents. Methods The content of aluminum in commercial noodles in Xiamen City was monitored from 2006 to 2011. Based on the survey of dietary consumption of residents in Xiamen City in 2010, the exposure of aluminum to household noodles was evaluated. Results The content of aluminum in 141 samples ranged from 5.53 to 882.00 mg / kg and the median (P25, P75) was 57.90 (19.80, 339.00) mg / kg. Xiamen residents averaged 0.92 mg · kg-1 · bw-1 of aluminum per week, accounting for 46.0% of the tentative weekly tolerable intake (PTWI); high-end consumer groups The 90th percentile of consumption was 2.17 mg · kg -1 · bw -1 of aluminum per week, representing 108.5% of the PTWI. Conclusion At present, there is a potential safety hazard in the aluminum exposure of flour products in Xiamen City. The supervision and management of flour products need to be effectively strengthened to reduce the content of aluminum in flour products.
