甜蜜素的主要作用是增加食品的甜度,其作为一种化学调味剂,实质上是环己基氨基磺酸钠(C6H12Na O3S)。与糖精相比,甜蜜素的甜度只有1/30,不仅口感好,而且成本低,故在食品中的应用比较广泛。但其毕竟属于化学物质,过量使用会对人体造成伤害,故国家标准GB2760-2007中对甜蜜素的应用有明确限定,而在食品检测中采用气相色谱法检测甜蜜素是保证其应用剂量不超过国家标准的重要手段。
