在烹饪专业的教学中包含两大课程体系,一是烹饪专业技能,二是烹饪理论知识。烹饪理论知识体系中《烹饪原料知识》、《饮食营养与卫生》、《餐饮业经营与管理》等课程是学生系统学好烹饪技术的重要基础知识。这些课程在教学中遭遇了大多数学生的冷遇,具体表现为上课开小差、讲话、玩手机、打瞌睡、睡觉,甚至于旷课。学生的这些行为,极其严重的影响着学生学习烹饪技术的成效,因此,十分有必要对中职学生对烹饪理论教学的厌学情绪及对策展开研究。
In the teaching of cooking specialty contains two major curriculum system, one cooking professional skills, the second is cooking theory. Culinary theory knowledge system, “knowledge of cooking ingredients”, “diet nutrition and health”, “Catering industry management and management” course is an important basic knowledge of students learn the cooking system. These courses encountered most of the students’ cold-hearted encounters during their teaching. They manifested themselves in poor attendance in classes, speaking, playing cell phones, dozing off, sleeping and even absenteeism. Therefore, it is very necessary to study secondary school students’ displeasure of cooking theory teaching and countermeasures.
