Non-destructive Measurement for Monascus Solid-State Fermentation via NIR Spectroscopy Calibration

  This paper considers nondestructive measurement of the Monascus solid-state fermentation taking usage of near infrared spectroscopy analysis technology.Moisture content and pH value are important chemical indicators of the solid-state fermentation process and reflect biochemical activities of the Monascus.In this paper,NIR spectra of the fermentation process are selected and chemo-metrics model is established taking usage of least square random variable ensemble strategy.The correlation coefficient of the moisture content of prediction set is 0.9770.The correlation coefficient of the pH value of prediction set is 0.9674.The model performance is accessible and the effectiveness of the strategy is proven.
