Amandin, the major storage protein, constitutes ~65% of the total proteins in almond seeds.Amandin contains key polypeptides that recognize almond allergic patient serum IgE, in vitro.Amandin is an 11S legumin-type hexameric protein.The monomer is composed of two types of polypeptides, 40-46 and 20-22 kDa, linked via disulfide bonds.
