Hypertension is a major risk factor in cardiovascular disease,a leading cause of death in Canada and many countries worldwide.Angiotensin-Ⅰ-converting enzyme (ACE,EC 3.4.15.1),also known as peptidyl dipeptidase A,is a key enzyme in the renin-angiotensin system which regulates blood pressure and electrolyte homeostasis.The synthetic ACE inhibitor drugs prescribed to manage hypertension may effectively lower blood pressure,but are frequently accompanied by undesirable side effects.In contrast,ACE-inhibitory peptides derived from food proteins and fermented foods have demonstrated efficacy without side effects for patients with borderline or mild hypertension,while showing no effect on normotensive individuals.
