近几年,洋快餐在中国快餐市场已占有重要位置,仅肯德基在中国的餐厅数已达500家,营业额1年就从中国“啃”走20亿人民币。洋快餐向中国大举进攻。谈到中国烹饪发展的方向,绝大多数人认为应发展快餐。大有以快制快(以我们的快餐制西方的快餐)之势,似乎要放弃传统工艺发展快餐,实质是要走向简单化、单一化。烹饪专业者说:“这就是说,以后的结局是大的切成小的,生的做成熟的就行了。”我认为这绝不是中国烹饪发展的方向,这是要放弃中华民族的宝贵遗产,否定中国烹饪是文化,是艺术,这不符合多元化,是不科学的。面对洋快餐的进攻,我们不能单纯的以快制快,应一方面要对中国烹饪的传统工艺有所继承,选取有特征、适合中国国情、口味、群众喜爱、便于机械化大量生产的快餐;另一方面要做大做强、继承、创新中国传统烹饪。要两手硬,共同抓,互为补充,互相利用。理由是随着人们生活水平的提高,人们的需求也是多方面的,不单是物质,还有精神、艺术的。现在,日本人用餐要少而精,美国人也讲究口味了。
