从贵州大豆品种中随机抽取 1 4 4份进行脂肪氧化酶测定、豆奶加工试验和品质、农艺性状分析。结果发现了 3 3份脂氧酶缺失品种 (其中包括 2份育成品种 ) ,占鉴定总数的 2 2 .9% ,包括缺失 Lox2、Lox3和 Lox2、3几种类型 ,以缺失 Lox3类型较多。脂氧酶缺失的地方品种的蛋白质、脂肪含量较低 ,其氨基酸成分及比例与正常品种一样 ,而缺失的育成品种的蛋白质含量则高达 4 7%以上。利用强碱高温消除豆浆中的豆腥味后 ,正常品种豆浆中的氨基酸总量减少较多且部分氨基酸成分消失 ,缺失品种则减少较少且氨基酸成分全部保持。 Lox3缺失品种的脂氧酶活性与百粒重、株粒重负相关。脂氧酶缺失的育成品种有着较大的直接应用价值 ,而多数缺失的地方品种表现为重感病毒病和生育期太长的缺点 ,需进行改造才能在生产上利用
A total of 1144 samples were randomly selected from Guizhou soybean varieties for lipoxygenase assay, soy milk processing test and quality and agronomic traits analysis. As a result, 33 varieties of lipoxygenase deficiency (including 2 bred varieties) were found, accounting for 22.9% of the total number of identification, including the deletion of Lox2, Lox3 and Lox2, 3, and the lack of Lox3 types. The local varieties with lipoxygenase deficiency have lower contents of protein and fat, and their amino acid composition and proportion are the same as those of normal varieties. However, the protein content of the missing cultivated varieties is as high as 47% or more. The use of strong base high temperature to eliminate soybeans in soy milk smell, the normal varieties of soybean milk in the total amino acid to reduce more and part of the disappearance of amino acid composition, lack of species is reduced less and all amino acid components remain. Lipoxygenase activity of Lox3-deficient cultivars was negatively correlated with 100-grain weight and grain weight. Lipozyme-deficient breeding varieties have great direct application value, while most of the missing local breeds have the disadvantage of re-sensing the virus disease and long growth period, which need to be modified to be used in production
