塘沟炖鸭,是安徽省当涂县湖阳乡塘沟镇上郁金香饭店的拿手菜。凡是到这里走亲访友、作客的人,当地人都要以“炖鸭”来款待。炖鸭,顾名思义,采用“炖”的方法将鸭烹制成菜。其实,在湖阳,这种佳肴的操作方法名曰炖,实为蒸。每到深秋季节,湖阳的白沙洲上,湖河流水缓慢,成群的鸭子在这里栖息,以小鱼虾和成熟的谷物为主要食料,由于饲料丰富,鸭子长得又肥又嫩。此时,正是品尝鸭馔的大好时光。据老人们回忆,郁金香饭店在解放初期就以“炖鸭”出名,以古食谱“干蒸鸭”为蓝本加
