目的了解镇江市区市售食品中食源性致病菌污染情况。方法样品采集于镇江市区主要超市、农贸批发市场和餐饮单位,按照GB/T4789-2008《食品卫生微生物学检验》对样品中沙门菌、单核细胞增生李斯特菌、金黄色葡萄球菌、副溶血性弧菌、肠道出血性大肠杆菌(EHEC O157:H7)以及大肠菌群进行检测。结果检测食品样品104份,样品的不合格率为18.26%;受致病菌污染的主要是生畜肉、动物性水产品以及即食食品中的熟肉制品、中式凉拌菜、沙拉。结论应加强对市售食品尤其是生畜肉、动物性水产品以及即食食品的监管;还应引进快速检测方法,提高开展食源性致病菌预警的检测手段。
Objective To understand the food-borne pathogenic bacteria in Zhenjiang urban area. Methods The samples were collected from major supermarkets, farmer’s wholesale markets and catering establishments in Zhenjiang. According to GB / T4789-2008 “Microbiological examination of food hygiene”, the samples of Salmonella, Listeria monocytogenes, Staphylococcus aureus, Vibrio hemolyticus, enterohemorrhagic Escherichia coli (EHEC O157: H7), and coliform bacteria. Results 104 samples of food samples were detected, with the unqualified rate of samples being 18.26%. The main pollutants of pathogenic bacteria were raw meat, animal aquatic products, cooked meat products, Chinese salad and salads in ready-to-eat foods. Conclusion Supervision on commercial foods, especially live meat, animal aquatic products and ready-to-eat foods should be strengthened. Rapid detection methods should also be introduced to improve detection methods for early warning of food-borne pathogens.
