The method of analyzing the pesticide residue in vegetables and fruits is discussed in detail. The pretreatment process and detection method of the sample are emphatically discussed. Some new sample preparation techniques, such as supercritical fluid extraction and solid-phase dispersion, are continually used in pesticide residue analysis; mass spectrometry, a method of identification, will be more widely used; the selectivity of atomic emission detectors Simultaneous analysis and detection of multiple elements will play an important role in the analysis of pesticide residues; immunoassays have shown great potential in pesticide residue analysis.
