目的了解龙岩市市售食品中副溶血性弧菌污染状况。方法对龙岩市2个主要集贸市场和2家超市6类620份食品进行检测。结果从6类620份食品中,检出副溶血性弧菌69株,检出率为11.1%;均在360份生鲜食品中检出,检出率为19.2%。水产品、生鸡肉、生牛肉和生猪肉受污染较高,污染率分别为24.2%、22.5%、18.7%和16.2%。结论水产品及生禽、畜肉是龙岩市副溶血性弧菌主要易污染食品,夏秋季市场生鲜动物性食品副溶血性孤菌污染严重。应加强监督监测工作,规范加工、销售等环节的卫生条件,从根本上提高食品的安全性,有效预防食源性疾病的发生。
Objective To understand the contamination of Vibrio parahaemolyticus in the commercial food in Longyan City. Methods Two main markets of Longyan and 620 foodstuffs of 6 categories in 2 supermarkets were tested. Results Among the 620 foodstuffs in 6 categories, 69 strains of Vibrio parahaemolyticus were detected, with a detection rate of 11.1%. All were detected in 360 samples of fresh food with a detection rate of 19.2%. Aquatic products, raw chicken, raw beef and raw pork were more contaminated with pollution rates of 24.2%, 22.5%, 18.7% and 16.2% respectively. Conclusions Aquatic products, raw poultry and meat are the main contaminants of Vibrio parahaemolyticus in Longyan City. The pollution of live parasite hemolytic bacteria of fresh animal food in summer and autumn is serious. Supervision and monitoring work should be stepped up, and the hygiene conditions of processing and sales should be standardized to fundamentally improve the safety of food and effectively prevent the occurrence of foodborne diseases.
