目的研究食品卫生监督量化分级管理的成效与存在问题,为更好地加强餐饮业卫生监督管理提供依据。方法对芜湖市2004年~2005年餐饮单位和集体食堂量化分级管理审核结果进行分析。结果审核的60家餐饮单位中,达到A级综合评分标准的7家,达到B级的25家;综合评分最高为98.75,最低为74.42分,平均86.59分。审核不合格的主要原因是关键项目缺陷,如餐厨比、后场布局、生熟交叉、不合格食品等不符合卫生要求。结论食品卫生监督量化分级管理应该引起民众的广泛关注,应该在引导餐饮业业主提高食品卫生水平方面发挥极其重要的作用。
Objective To study the effectiveness and existing problems of quantitative and hierarchical management of food hygiene supervision so as to provide basis for better strengthening the supervision and management of food hygiene. Methods The audit results of the quantitative management of catering units and collective canteens from 2004 to 2005 in Wuhu City were analyzed. Out of the 60 food and beverage companies that reviewed the results, 7 were rated A-level comprehensive and 25 were rated B; the highest overall score was 98.75 and the lowest was 74.42, an average of 86.59. The main reason for the unqualified audit is the key project defects, such as food and kitchen ratio, the backcourt layout, raw and cooked cross, unqualified food does not meet the health requirements. Conclusion Quantitative and hierarchical management of food hygiene supervision should arouse widespread public attention and should play an extremely important role in guiding food and beverage industry owners to improve their food hygiene standards.
