对24种新鲜水果蔬菜的主要营养成分、氧化还原特性、对亚硝酸盐的消除作用及抗氧化活性的测定及统计分析结果表明,果蔬对NO_2~-的消除率与其抗氧化活性之间存在显著的相关(P<0.05)。NO_2~-消除量和自由基综合消除活性均与果蔬的氧化还原当量之间存在极显著的回归相关(P<0.01),与糖、蛋白质含量间有显著的回归关系,而与果蔬的电动势值、VC及B族维生素含量等无相关性(P>0.05)。说明新鲜果蔬所含营养成分的综合还原特性是其具有防衰保健作用的重要原因之一。
The results showed that there was a significant difference between the removal rate of NO 2 - and the antioxidant activity of 24 kinds of fruits and vegetables fresh fruits and vegetables, redox characteristics, elimination of nitrite and antioxidant activity, (P <0.05). There was a significant correlation between NO_ (2 -) elimination and free radical elimination activity and the redox equivalent of fruits and vegetables (P <0.01), but significant correlation with the contents of glucose and protein , VC and B vitamins content was not related (P> 0.05). Description of fresh fruits and vegetables contained nutrients contained in the comprehensive reduction of its anti-health and health is one of the important reasons.
