菜油。我国菜油主要是以甘兰、油菜和芥菜三种菜的菜籽加工而成。由于这三类菜籽均属于高芥酸菜籽,故菜油中所含的芥酸高达48.4%。科学研究认为,芥酸是廿二碳一烯酸,由于碳链较长,难以消化、吸收,所以利用率也就差,进而降低了菜油的营养价值。另一方面,高芥酸菜油可影响动物生长发育和繁殖能力,同时有损害心肌的作用,使心肌脂质沉积、脂肪浸润和纤维细胞增生。究其原因,仍然主要是菜油中所含的芥酸量
Vegetable oil. China’s vegetable oil is mainly processed by rapeseed, rapeseed and mustard greens. As these three types of rapeseed belong to high erucic rapeseed, vegetable oil contains up to 48.4% erucic acid. Scientific research suggests that erucic acid is a docosahexaenoic acid, due to the longer carbon chain, difficult to digest and absorb, so the utilization rate will be poor, thus reducing the nutritional value of vegetable oil. On the other hand, high-erucic acid rapeseed oil can affect the growth and reproduction ability of animals while impairing myocardial function, causing myocardial lipid deposition, fat infiltration and fibroblast proliferation.
