黄酒为世界三大古酒之一,源于中国,且唯中国有之,可谓独树一帜。黄酒产地较广,品种很多,著名的有绍兴加饭酒、福建老酒、江西九江封缸酒、江苏丹阳封缸酒、无锡惠泉酒、广东珍珠红酒、山东即墨老酒、兰陵美酒、秦洋黑米酒、上海老酒、大连黄酒等等,但是被中国酿酒界公认的,在国际国内市场最受欢迎的,能够代表中国黄酒总的特色的,首推绍兴酒。越酒行天下,作为一种国粹,曾风靡过去,辉及当代,影响后世,其深刻的成因和内在的基因必有着许多迷人的地方,值得我们去探究。为了抛砖引玉,某从稻作文明,水利文明,工业文明,人文文明四个角度进行一些初探,以供大家批评指正。

Famous Shaoxing Jiajiu wine, Fujian Jiujiu, Jiangxi Jiujiang Sealed Wine, Jiangsu Danyang Sealed Wine, Wuxi Huiquan Wine, Guangdong Pearl Wine, Shandong Jimo Wine, Lan Ling Wine, Qin Yang Black rice wine, Shanghai old wine, Dalian yellow wine, etc., but is recognized by the Chinese brewing industry, the most popular in the international and domestic market, can represent the general characteristics of Chinese rice wine, Shaoxing wine. The more world of wine, as a kind of national quintessence, once swept away in the past, brilliance and contemporary, affecting future generations. Its profound causes and intrinsic genes must have many fascinating places that deserve our exploration. In order to throw a brick to attract the elixir of jade, we will conduct some preliminary explorations from the four perspectives of rice cultivation civilization, water conservation civilization, industrial civilization, and humane civilization to provide criticism and correction.
