报告了福州市糕点(面包和蛋糕)的霉菌污染情况及污染原因。福州市糕点的霉菌指标合格率是81.31%,糕点在室温暴露于空气中3天后的霉菌指标合格率是39.25%。面包、蛋糕的霉菌指标合格率分别是83.05%、79.01%,室温放置3 天后霉菌指标合格率分别是35.59%和43.75%。糕点在室温放置3天后霉菌指标合格率显著下降。
Fuzhou City, reported the pastry (bread and cake) mold pollution and pollution causes. Fuzhou pastry mold index pass rate was 81.31%, pastry at room temperature after exposure to air for 3 days the mold index pass rate was 39.25%. Bread, cake mold indicators pass rates were 83.05%, 79.01%, after 3 days at room temperature mold indicators pass rates were 35.59% and 43.75%. 3 days after the pastry placed at room temperature mold indicators pass rate decreased significantly.
