目的了解梧州市市售食品中食源性致病菌的污染情况,确定食品危害因素的分布和可能的来源,及时发现食品安全隐患,为食品卫生监督部门提供科学有效的监管依据。方法对在梧州市区内出售的7大类食品进行常见的食源性致病菌检测。结果在7大类食品共256件样品中检出食源性致病菌50株,总检出率为19.53%。水产品致病菌检出率为40.00%,主要是溶血性弧菌(23.33%);其次是婴幼儿食品,主要是蜡样芽胞杆菌(31.11%);果蔬类食品为32.00%,主要是大肠埃希菌(32.00%);肉制品为10.00%,主要是金黄色葡萄球菌(8.75%);熟食米面制品为6.45%,主要蜡样芽孢杆菌(6.45%);甜品为(3.12%),主要是金黄色葡萄球菌(3.12%);焙烤食品没有检出致病菌。结论梧州市市售食品中受到食源性致病菌污染的情况不容乐观,应加强监管措施,减少食源性疾病的发生。
Objective To understand the contamination of food-borne pathogens in the food available for sale in Wuzhou City, determine the distribution and possible sources of food hazards, discover hidden dangers of food in time and provide scientific and effective supervision basis for food hygiene supervision departments. Methods Seven kinds of foodstuffs sold in downtown Wuzhou were tested for common food-borne pathogenic bacteria. Results A total of 50 food-borne pathogens were detected in 256 samples from 7 major types of food, with a total detection rate of 19.53%. The detection rate of pathogens in aquatic products was 40.00%, mainly Vibrio parahaemolyticus (23.33%); followed by infant foodstuffs, mainly Bacillus cereus (31.11%); fruits and vegetables 32.00%, mainly the large intestine Escherichia coli (32.00%); meat products 10.00%, mainly Staphylococcus aureus (8.75%); cooked rice products 6.45%, the main Bacillus cereus (6.45%); desserts (3.12%), the main Is Staphylococcus aureus (3.12%); no detectable pathogens are present in baked goods. Conclusion The food contamination in food in Wuzhou City is not optimistic. Therefore, the regulatory measures should be strengthened to reduce the incidence of foodborne diseases.
