各点居民膳食硒的主要来源为植物性食品,其中谷类食品占有极为重要的地位,就食物平均含硒量(μg/g)而论,高硒点谷物中玉米大于大米,前者均值为1.40,后者为1.07,但糯米高达4.46,其原因不明。高硒点黄豆达2.64,为低硒点黄豆的20倍。高硒点蔬菜达0.980,为低硒点的70倍,在一定膳食结构下,如荒年时,蔬菜硒可能是造成中毒的一项重要膳食硒来源。动物性食物中腊肉为2.44,均为鲜肉的两倍,说明在腌制过程中受到煤烟中硒的污染。 The main source of dietary selenium for all residents is plant food, of which cereal occupies a very important position.
