为了研究在高CO_2气调环境下O_2对CO_2伤害的缓解作用,在固定40%CO_2情况下,分别设置O_2为30%、40%、50%和60%(N2平衡),同时以自然大气为对照,对5℃贮藏条件下西兰花的乙烯释放量、呼吸强度、失重率、黄化率、叶绿素含量、抗坏血酸总量、乙醇及乙醛含量进行定期测定。结果表明:过低或过高的O_2比例都会对西兰花贮藏品质造成不利影响,O_2比例过低易造成西兰花无氧呼吸生成乙醇、乙醛,O_2比例过高则造成西兰花生理活动加快,促使营养物质的迅速消耗和黄花率的上升;在固定40%CO_2前提下,随着O_2比例的升高,西兰花乙烯释放量和呼吸速率随之上升,叶绿素含量下降速率加快,黄花率增大,但乙醇、乙醛含量降低;只有合适的O_2/CO_2比例,才能较好的保持西兰花贮藏品质,该试验条件下,以40%O_2+40%CO_2最好。
In order to study the mitigation effect of O_2 on CO_2 injury under high CO_2 atmosphere, O_2 was set at 30%, 40%, 50% and 60% (N2 balance) with 40% CO 2 fixed, respectively. In comparison, the ethylene release, respiration rate, weight loss rate, yellowing rate, chlorophyll content, total ascorbic acid content, ethanol and acetaldehyde content of broccoli were determined regularly at 5 ℃. The results showed that too low or too high proportion of O_2 could adversely affect the storage quality of broccoli. Low proportion of O_2 could lead to the anaerobic respiration of broccoli to produce ethanol and acetaldehyde. The high O_2 ratio led to the accelerated physiological activity of broccoli, Promoted the rapid consumption of nutrients and the increase of yellowing rate. With the increase of O_2, the release of ethylene and respiration rate increased along with the increase of O_2, the rate of decline of chlorophyll content and the rate of yellowing increased , But the contents of ethanol and acetaldehyde decreased. Only when the ratio of O 2 / CO 2 was suitable, the storage quality of broccoli could be kept well. Under the experimental conditions, 40% O 2 + 40% CO 2 was the best.
