桑椹成熟过程中部分活性成分的含量变化(英文)

以10个果桑品种为材料,检测成熟桑椹中1-脱氧野尻霉素(DNJ)、多糖、黄酮类化合物的含量,结果表明不同品种桑椹中的3种活性成分含量存在显著差异。选择活性成分含量较高的红果2号和蜀椹1号为材料,自盛花期后采样检测桑椹发育成熟过程鲜果肉中活性成分的含量变化,研究结果表明:红果2号和蜀椹1号盛花期后第3天的果肉中,DNJ质量分数分别为0.0741%和0.0725%,随着桑椹的发育成熟,DNJ含量逐渐降低,2个品种盛花期后第31天果肉中的DNJ含量比第3天的样品分别下降了49.80%和58.90%;随着桑椹的发育成熟,红果2号和蜀椹1号果肉中的总多糖含量逐渐增加,至盛花期后第27天达到最大,总多糖质量分数分别为9.572%和10.276%;随着桑椹的发育成熟,红果2号和蜀椹1号果肉中的总黄酮含量呈现双峰变化,盛花期后第11天和第27天,果肉中总黄酮的含量达到峰值,质量分数分别为0.313%、0.444%和0.264%、0.326%。另检测红果2号和蜀椹1号成熟桑子中的DNJ含量远远高于果肉中的含量,但总黄酮含量却远远低于果肉中的含量,且未检测到多糖。依据检测结果初步认为,盛花期后第27天的桑椹是生产药食两用桑椹食品的优质原料 The contents of 1-deoxynojirimycin (DNJ), polysaccharides and flavonoids in mature mulberry fruits were determined using 10 mulberry cultivars.
