同一个菜肴,叫法相同,原料一样,但由于厨师与厨师之间掌握的手法不同而各具特色,每个优秀厨师的菜肴都有其独到之处。但同一个菜肴又有其共性,即程序规范性、科学性和保持营养成分的有效性等。它们都是有章可循的,所以考核的标准是相同的。下面就厨师升级考核中所发现的一些问题进行分析,以便使考生对应考菜肴细节规范化,方法正确化。 下举二例均为中级考核菜肴的抽鉴品种。
