西安归来吃面食,仿佛饮茶水未开。西安这座古城以清真饮食著名,它所代表的羊肉饮食文化,更多地印证着古代中国风格, 具体地说,是传统的长安风味。西安的羊肉水饺好吃。这水饺,溢乎乎的一层红油,碗心撒满了绿香蓿,吃到嘴里, 一口仅得其半,味美生香,如嚼话梅。一愣后细细品味,方知吃的是羊肉水饺。那辣蒜汤,它没有柳词的婉约,倒有边塞诗的辛烈与浩荡。至于那羊肉泡馍,长安人总爱这样玄着,开口是地道的秦腔,掰馍时就连口音也变了,到一碗蚕食时,已走样得让人惊诧。
