比较分析了红米品种皖稻129与普通稻米品种皖稻147糙米中矿质元素、粗蛋白、脂肪、碳水化合物和氨基酸等营养成分的含量差异。结果表明,皖稻129糙米中脂肪含量比普通稻米低,而碳水化合物、蛋白质、矿质元素的含量均高于普通稻米品种皖稻147,其中Se和Fe元素含量分别超过普通稻米1.75倍和3.75倍;10种必需氨基酸含量超过普通稻米31.58%~114.29%,总含量比普通稻米高58.31%,其中赖氨酸和苏氨酸含量分别是普通稻米的2.14倍和2.11倍。
The nutrient contents of mineral elements, crude protein, fat, carbohydrate and amino acids in red rice variety Wandao 129 and common rice variety Wandao 147 were compared. The results showed that the content of fat in Wandao129 brown rice was lower than that of normal rice, while the contents of carbohydrate, protein and mineral elements were higher than those of common rice variety Wandao 147, with the contents of Se and Fe over 1.75 times and 3.75 times respectively . The contents of 10 essential amino acids were 31.58% ~ 114.29% higher than those of common rice and the total contents were 58.31% higher than that of common rice. The contents of lysine and threonine were 2.14 and 2.11 times higher than those of common rice respectively.
