半个世纪前,我采访过一位酱园的张老师傅,他的一番话,事简意深,所以至今我仍记得。他说,学手艺一般三年出师,都能掌握基本技能,独立工作,唯独在酱园学徒,出师后很难独立操作。原因何在?学修表、修汽车,每天都摆弄相同的物件,一千多天怎么也学会了。唯独腌咸菜,季节性很强,有的一年只干一次。收了萝卜,腌酱萝卜;收了瓜,腌八宝酱瓜。不同瓜菜,各有特点,腌法也不一样。如果今年没记住要领,只好等到第二年再学。学徒三年,有的只腌过三次。尤其是一些精细的酱菜,出师了,还摸不着大门。
