目的了解某市城区餐饮业餐饮具卫生消毒现况及影响因素,为餐饮业餐饮具消毒监管提供决策依据。方法通过现场查看和抽样检测方式,对江苏南通市某城区餐饮业餐饮具消毒的卫生状况及消毒质量进行调查与检测。结果共抽查该城区216家餐饮单位,卫生状况合格率为67.13%,设有专用餐饮具消毒间的单位占68.06%。共检测各种餐饮具2 160件,平均大肠菌群检出率为17.22%。检出大肠菌群不合格的餐具主要集中在碟与筷。结论该城区餐饮业餐饮具消毒工作存在消毒功能间不合理,消毒与保洁硬件设施缺失,中小型餐饮单位卫生状况亟待进一步整治与规范。
Objective To understand the status and influencing factors of sanitary disinfection of catering tableware in a city urban area and provide decision-making basis for the supervision of tableware disinfection in catering industry. Methods By means of field inspection and sampling, the health condition and disinfection quality of catering tableware in a city of Nantong, Jiangsu Province were investigated and tested. Results A total of 216 catering units in the city were sampled, with a passing rate of 67.13% for hygiene conditions and 68.06% for units with special tableware disinfection units. A total of 2 160 pieces of tableware were detected, the average coliform detection rate was 17.22%. Detected coliform bacteria unqualified tableware mainly in the dish and chopsticks. Conclusion There is an irrational disinfection function in the tableware disinfection work in the catering industry in the city and the lack of hardware facilities for disinfection and cleaning. The hygiene status of small and medium-sized catering units needs to be further rectified and standardized.
