为探讨微波辅助萃取树莓花青素过程对树莓萃取液介电特性的影响规律,以树莓为原料,采用二次正交旋转中心组合设计试验,研究萃取时间、萃取温度、乙醇浓度和物液比对介电常数和介电损耗因子的影响规律。用Design Expert软件处理试验数据,研究结果表明:各工艺参数对介电常数和介电损耗因子变化影响显著,所建立的数学模型可以描述树莓萃取液介电特性在不同工艺条件下的变化规律。研究结果可为控制微波辅助萃取树莓花青素品质提供理论依据。
In order to investigate the influence of microwave-assisted extraction of raspberry anthocyanin on the dielectric properties of raspberry extract, raspberry was used as raw material. The quadratic orthogonal rotation center design was used to study the effects of extraction time, extraction temperature, ethanol concentration and Effect of Material Ratio on Dielectric Constant and Dielectric Loss Factor. Design Expert software was used to process the experimental data. The results show that: the process parameters have significant influence on the dielectric constant and dielectric loss factor, and the mathematical model established can describe the variation of dielectric properties of raspberry extract under different process conditions . The results provide a theoretical basis for controlling the quality of raspberry anthocyanins extracted by microwave.
