目的了解河南省食用菌镉污染现状,为今后河南省开展居民镉暴露风险评估提供基础数据。方法于2010年全年在河南省18个地市共采购865份当地产食用菌,采用GB/T5009.15《食品中镉的测定》分析镉含量,依据GB2762-2005《食品中污染物限量》计算镉含量超标率,采用秩和检验和x2检验进行统计学分析。结果 2010年河南省食用菌的镉含量平均值为0.11 mg/kg,整体超标率为11.30%。平菇、草菇、木耳、金针菇、香菇和珍稀菌种6大类别中,香菇中镉超标率最高,为20.70%,金针菇最低,为1.12%;不同区域中,采自河南省东、西、南部地区的食用菌镉含量较高,北部较低。结论 2010年河南省食用菌镉含量有一定的超标情况,建议今后开展进一步的专项调查研究,分析具体原因和程度,为进一步的镉暴露风险评估提供数据支持;同时提示政府相关部门也应加强监管。
Objective To understand the current status of edible fungus cadmium pollution in Henan Province and to provide the basic data for the future risk assessment of cadmium exposure in Henan Province. Methods In 2010, a total of 865 local edible fungi were purchased from 18 cities in Henan Province. The content of cadmium was analyzed by GB / T5009.15 Determination of Cadmium in Food. According to GB2762-2005 “Limit of Contaminants in Food” Calculation of cadmium content exceeded the standard, using rank sum test and x2 test for statistical analysis. Results The average content of cadmium in edible fungi in Henan province in 2010 was 0.11 mg / kg, with the overall exceeding the standard rate of 11.30%. In the six categories of mushrooms, mushrooms, mushrooms and rare mushrooms, the highest standard of excessive cadmium in mushrooms was 20.70% and the lowest in mushrooms was 1.12%. In different regions, Edible mushrooms in the southern region have a higher cadmium content and a lower northern part. Conclusion The content of cadmium in edible fungi in Henan Province in 2010 has exceeded the standard. It is suggested that further investigation and study should be carried out in the future to analyze the specific reasons and levels, and to provide data support for the further risk assessment of cadmium exposure. Meanwhile, the related government departments should also be strengthened to supervise .
