为了比较浙江、湖北、河南及云南野生香菇对Fe、Cu、Mg、Ca、Ni 5种微量元素的富集能力,了解不同地区野生香菇的营养价值提供初步科学依据。采用火焰原子吸收法测定Fe、Cu、Mg、Ca、Ni 5种微量元素。结果表明,不同产地的野生香菇中Mg的含量接近,而Fe、Cu、Ca、Ni含量各不相同,其中Fe和Ca的含量相对较高,Cu、Ni和含量相对较低;云南大理野生鸡枞对这5种微量元素含量富集能力较强。云南大理野生香菇中各种微量元素含量均较高,可初步得出其营养价值较高。
In order to compare the enrichment ability of five kinds of trace elements Fe, Cu, Mg, Ca and Ni in wild mushrooms of Zhejiang, Hubei, Henan and Yunnan, and to understand the nutritional value of wild shiitake mushrooms in different regions, preliminary scientific evidence was provided. Determination of Five Trace Elements of Fe, Cu, Mg, Ca and Ni by Flame Atomic Absorption Spectrometry. The results showed that the contents of Mg in wild shiitake mushrooms in different areas were similar, while the contents of Fe, Cu, Ca and Ni were different. The contents of Fe and Ca were relatively high while the contents of Cu and Ni were relatively low. Fir on the five kinds of trace element content enrichment ability. Yunnan Dali wild mushrooms in a variety of trace elements are higher, may initially come to their higher nutritional value.
