目的了解广州市食品中食源性致病菌的污染状况,为食源性疾病的监测和预警提供科学依据。方法按照《2013年国家食品污染和有害因素风险工作手册》的要求,采集广州市大型超市、农贸市场、餐饮饭店、流动早餐经营点的11类食品,进行金黄色葡萄球菌、单增李斯特菌、沙门菌、副溶血性弧菌、创伤弧菌、致泻性大肠埃希菌、阪崎肠杆菌、蜡样芽孢杆菌、铜绿假单胞菌9种食源性致病菌的检测。结果共采集11类食品418份样品,检出6种食源性致病菌共计14株,总检出率为3.34%(14/418)。其中,检出沙门菌3株,检出率为0.85%(3/351);检出副溶血性弧菌3株,检出率为11.54%(3/26);检出创伤弧菌2株,检出率为7.69%(2/26);检出阪崎肠杆菌3株,检出率为7.50%(3/40);检出蜡样芽孢杆菌2株,检出率为2.53%(2/79);检出金黄色葡萄球菌1株,检出率为0.31%(1/319)。在11类食品当中,生食水产品的检出率最高,为19.23%(5/26);其次为婴幼儿食品,检出率为7.5%(3/40)。结论广州市主要食品中存在不同程度的食源性致病菌污染,应加强卫生监督管理,采取有效的控制措施,减少食源性疾病的发生。
Objective To understand the status of food-borne pathogens in food in Guangzhou and to provide a scientific basis for the monitoring and early warning of food-borne diseases. Methods According to the requirements of 2013 National Handbook of Food Contamination and Hazardous Factors Risk, 11 kinds of foodstuffs were collected from large supermarkets, farmers’ markets, food and beverage outlets and mobile breakfast outlets in Guangzhou. Staphylococcus aureus, Listeria monocytogenes , Salmonella, Vibrio parahaemolyticus, Vibrio vulnificus, diarrheal Escherichia coli, Enterobacter sakazakii, Bacillus cereus and Pseudomonas aeruginosa. Results A total of 418 samples of 11 types of food were collected. A total of 14 strains of 6 foodborne pathogens were detected, with a total detection rate of 3.34% (14/418). Three strains of Salmonella were detected with the detection rate of 0.85% (3/351). Three strains of Vibrio parahaemolyticus were detected with a detection rate of 11.54% (3/26). Two strains of Vibrio vulnificus were detected , The detection rate was 7.69% (2/26). Three strains of Enterobacter sakazakii were detected with the detection rate of 7.50% (3/40). Two strains of Bacillus cereus were detected with the detection rate of 2.53% 2/79). One strain of Staphylococcus aureus was detected with a detection rate of 0.31% (1/319). Among the 11 types of food, raw aquatic products had the highest detection rate of 19.23% (5/26), followed by infant food (7.5% (3/40)). Conclusion There are different levels of food-borne pathogens in the main food in Guangzhou City. Health supervision and management should be strengthened to take effective control measures to reduce the incidence of food-borne diseases.
