目的了解2014-2015年昆山市不同餐饮服务单位餐饮具消毒效果,为加强卫生监督和指导提供依据。方法现场随机抽取消毒备用的餐饮具,采用大肠菌群检测纸片进行检测。结果昆山市餐饮服务单位餐饮具消毒检测总体合格率为80.8%;大型餐饮单位餐饮具消毒检测合格率较中、小型单位高;春冬季餐饮具消毒检测合格率高于夏秋季节;筷(勺)子和杯子消毒检测合格率高于碗和菜碟。结论为进一步提高消毒合格率,卫生机构应加强对中、小型餐饮服务单位和夏秋时节的监督监测力度。
Objective To understand the disinfection effect of tableware of different food service units in Kunshan City from 2014 to 2015, and provide basis for strengthening health supervision and guidance. Methods The scene was randomly selected sterile food and beverage equipment, the use of coliforms detection of paper testing. Results The overall pass rate of disinfection test of catering equipment in Kunshan City was 80.8%. The passing rate of disinfection test of catering equipment in large catering units was higher than that of medium and small units. The passing rate of disinfection test in spring and winter was higher than that in summer and autumn. Children and cups disinfection test pass rate higher than bowl and dish. Conclusion To further improve the pass rate of disinfection, health agencies should strengthen the supervision of medium and small-scale catering service units and summer and autumn monitoring efforts.
