随着物质生活水平的提高,人们的饮食结构也发生相应的变化,越来越多的人将低脂肪和营养丰富的食用菌作为餐桌上的美味佳肴。食用菌在不少地区已采用人工方法大量培养。我国是一个人多地少的大国,部分贫困地区,人民的温饱问题尚未解决。蛋白质的供应更是严重不足,而食用菌人工培养的普及,一方面可以解决蛋白质供应不足,另一方面又可以使这些地区逐步富起来。食用菌的生产原料在我国具有得天独厚的条件,可以就地取材。此外食用菌除了对人体具有极高的营养价值外,还有很高药用价值和经济价值。关于食用菌的发展前途,我想从以下几方面加以说明: 一、食用菌的生产原料来源广、成本低 食用菌是腐生性的大型真菌,主要靠分解有机物作为营养物质。我国是一个农业大国,秸秆、家畜粪便、工业的下脚(棉籽壳、豆渣、酒糟、纸渣、粉渣、木屑、甘蔗渣、麸皮、米糠等的拥有量十分丰富。这些有机物平时大部分都被烧掉或自然腐烂掉,如果我们用这些废物作为生产食用菌的原料,那么其成本

Regarding the development of edible fungi, I would like to explain from the following aspects: 1. The production of edible fungi has a wide source of raw materials and low cost.
