食物中毒,顾名思义是因为吃了不卫生的食物而引起的。临床上常表现为以恶心呕吐、腹痛腹泻为主的急性胃肠炎症状。具有潜伏期短、时间集中、突然暴发、来势凶猛、危害性大的特点。据统计,食物中毒大多发生在夏秋季节。因此,必须引起重视,采取措施,积极预防。研究认为,引起食物中毒的尿因有三个:一是吃了被细菌及其毒素污染的食物。食品在加工、运输、贮存、销售、制作过程中,由于忽视食品卫生,引起交叉污染。常见的有沙门氏菌、葡萄球菌、嗜盐菌、肉毒杆菌
